Chef John's Meatball-Inspired Meatloaf Chef John delivers again! I tried Chef John's Meatball-Inspired Meatloaf and it is a success! Every body loves it. Meatloaf is tender with nice flavor. I serve meat loaf with bob oven mash potatoes and a salad. Plenty leftovers for lunch box. I made few changes: 1) I use a pond of 80/20 ground beef and a pound of ground pork because I am still on the saga of cleaning freezer. 2) breadcrumbs mixed with milk for 15-20 minutes but I put this mix a lot longer and bread crumb observed all milk and I have to break it apart to be able to mix with other ingredients. 3) chef John call for your favorite tomato sauce and after looking videos I am not sure what sauce to use so I mix 1/4 cup ketchup with 1/4 cup brown sugar and 1 tablespoon mustard, wish together and spread it on the surface of meatloaf before going to overnight. Anyway, it’s a right sauce choice because it goes well with meatloaf.

Leftover Ham -n- Potato Casserole is a great way to use out leftover ham and potatoes. Another one dish meal already contains protein and starch. Al I need to do is open a bag of salad to serve together!

Baked Hawaiian Sandwiches

Baked Hawaiian Sandwiches Usually weekend I take a break from cooking but Hawaiian bread was half price due to expired soon on grocery stor. As frugal asI am, I can’t pass on the deal and I remembered a slider recipe. Here comes this timeless but simple recipe. Basically you slide the whole Hawaiian roll in half, put on ham or whatever meat you have, then put cheese on top, cover the half sliced top roll back. Supposedly you use thin sliced ham or turkey and sliced cheese but I only have ham chunks and shredded cheese on hand so I use them. Next you make sauce to pour over the top then bake in oven. Based on review, I use 1 TBSP garlic powder instead of dried onion and sesame seeds instead of poppy seeds because that is what I have in my pantry. And I baked the slider at 350 F instead of 400 F for about 25 minutes. Basically you just want to melt cheese and cooked the sauce a bit. Serve with bag of salad and some fried potatoes.
